Description

Ingredients

For the crust:

  • 1 ½ cups gluten-free graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter, melted

For the cheesecake layer:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs

For the apple layer:

  • 2 medium apples, peeled, diced
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

For the streusel topping:

  • ½ cup gluten-free oats
  • ¼ cup almond flour
  • ¼ cup brown sugar
  • ¼ tsp cinnamon
  • 3 tbsp cold butter, cubed


Instructions

  1. Preheat the oven: Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
  2. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake.
  3. Make the cheesecake layer: Beat cream cheese, sugar, and vanilla. Add eggs one at a time and pour over the crust.
  4. Add the apple layer: Toss diced apples with brown sugar, cinnamon, and nutmeg. Sprinkle over the cheesecake.
  5. Prepare the streusel: Mix oats, almond flour, sugar, and cinnamon. Cut in cold butter and sprinkle over the apples.
  6. Bake and cool: Bake for 35–40 minutes until set. Cool, then refrigerate before serving.
