Ingredients
For the crust:
- 1 ½ cups gluten-free graham cracker crumbs
 - ¼ cup granulated sugar
 - 6 tbsp unsalted butter, melted
 
For the cheesecake layer:
- 16 oz cream cheese, softened
 - ½ cup granulated sugar
 - 1 tsp vanilla extract
 - 2 large eggs
 
For the apple layer:
- 2 medium apples, peeled, diced
 - 2 tbsp brown sugar
 - 1 tsp cinnamon
 - ¼ tsp nutmeg
 
For the streusel topping:
- ½ cup gluten-free oats
 - ¼ cup almond flour
 - ¼ cup brown sugar
 - ¼ tsp cinnamon
 - 3 tbsp cold butter, cubed
 
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper.
 - Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake.
 - Make the cheesecake layer: Beat cream cheese, sugar, and vanilla. Add eggs one at a time and pour over the crust.
 - Add the apple layer: Toss diced apples with brown sugar, cinnamon, and nutmeg. Sprinkle over the cheesecake.
 - Prepare the streusel: Mix oats, almond flour, sugar, and cinnamon. Cut in cold butter and sprinkle over the apples.
 - Bake and cool: Bake for 35–40 minutes until set. Cool, then refrigerate before serving.
