Ingredients

- 1/4 cup coconut oil or unsalted butter (melted)
- 1/3 cup honey or maple syrup
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together the almond flour, baking soda, and salt.
- Combine wet ingredients: In a separate bowl, mix the melted coconut oil or butter, honey or maple syrup, lemon zest, lemon juice, and vanilla extract until well combined.
- Form dough: Pour the wet ingredients into the dry and stir until a soft dough forms. Allow the dough to rest for 5 minutes.
- Shape and bake: Scoop tablespoon-sized portions, roll into balls, flatten gently, and place on the baking sheet. Bake for 9–11 minutes until lightly golden.
- Cool and serve: Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
