Description
A classic German red cabbage recipe featuring shredded cabbage cooked slowly with onions, apples, sugar, and vinegar to create a tangy, sweet, and tender side dish perfect for traditional meals.
Ingredients
Vegetables and Fruit
- 1 medium onion, halved and sliced
- 1 medium apple, sliced
- 1 medium head red cabbage, shredded (about 8 cups)
Seasonings
- 1/3 cup sugar
- 1/3 cup white vinegar
- 3/4 teaspoon salt (optional)
- 1/4 teaspoon pepper
Instructions
- Prepare the onion and apple: Heat a large Dutch oven with cooking spray over medium heat. Add the halved and sliced onion and the sliced apple, cooking and stirring occasionally until the onion is tender, about 5 minutes.
- Add cabbage and seasonings: Stir in the shredded red cabbage, sugar, white vinegar, salt (if using), and pepper. Mix well to combine all the ingredients evenly.
- Cook the cabbage: Cover the Dutch oven and cook the mixture over medium heat, stirring occasionally, until the cabbage becomes tender, approximately 1 hour.
- Serve: Remove from heat and serve the German red cabbage warm or allow it to cool and serve cold as a traditional side dish.
Notes
- Using a Dutch oven allows for even heat distribution and reduces the risk of burning during the slow cooking process.
- Adjust sugar and vinegar amounts to balance sweetness and tanginess to your preference.
- Cooking time can vary slightly depending on the tenderness of the cabbage you prefer.
- For a vegan and vegetarian dish, use cooking spray or vegetable oil.
