Ingredients
Potato Pancakes:
- 2 pounds russet potatoes, peeled
- 1 small yellow onion
- 2 large eggs
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- vegetable oil for frying

Instructions
- Grate the Potatoes and Onion: Grate the potatoes and onion using a box grater or food processor. Squeeze out excess liquid with a kitchen towel.
- Combine Ingredients: In a large bowl, mix the grated mixture with eggs, flour, salt, and pepper until well combined.
- Fry the Pancakes: Heat oil in a skillet, scoop 1/4 cup of mixture per pancake, flatten, and fry until golden brown on both sides.
- Drain and Serve: Transfer cooked pancakes to a paper towel–lined plate. Serve hot with toppings of choice.
Notes
- To keep pancakes warm, place them in a 200°F oven.
