Ingredients
For the cookie base:
- 1 box German chocolate cake mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
For the coconut pecan topping:
- 1/2 cup evaporated milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 cup shredded sweetened coconut
- 1/2 cup chopped pecans
Instructions
- Preheat and prepare: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the cookie dough: Combine cake mix, oil, eggs, and vanilla until a soft dough forms. Scoop onto baking sheet and bake for 8–10 minutes.
- Make the topping: In a saucepan, cook evaporated milk, sugar, butter, and egg yolk until thickened. Stir in vanilla, coconut, and pecans. Cool slightly.
- Add topping: Spoon the coconut pecan mixture onto cooled cookies. Optional: drizzle with melted chocolate.
Notes
- You can make the topping ahead and refrigerate it until ready to use. Bring to room temperature before spooning onto cookies.
