Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
Garlic Tomato Sauce
- 4 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes with juices
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Cheese Topping
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Garnish
- Chopped fresh parsley or basil (optional)
Instructions
- Preheat oven and prepare baking dish: Preheat your oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish to prevent sticking and arrange the chicken breasts evenly in a single layer.
- Sauté garlic: In a small skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned to bring out its flavor.
- Prepare tomato sauce: Pour the diced tomatoes with their juices into the skillet with the garlic. Stir in dried basil, oregano, salt, black pepper, and red pepper flakes if using. Let this mixture simmer for 3 to 4 minutes to blend the flavors well.
- Assemble the dish: Spoon the garlic tomato mixture evenly over each of the chicken breasts in the baking dish.
- Add cheese topping: Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly on top of the tomato-covered chicken.
- Bake: Place the baking dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the chicken is cooked through, reaching an internal temperature of 165°F (74°C), and the cheese is melted and bubbly.
- Garnish and serve: Remove from the oven and garnish with chopped fresh parsley or basil if desired. Serve hot with your choice of pasta, rice, or roasted vegetables.
Notes
- This baked chicken pairs wonderfully with pasta, rice, or roasted vegetables to make a complete meal.
- For more depth of flavor, marinate the chicken in olive oil and herbs for 1 hour before baking.
- You can substitute chicken breasts with chicken thighs for a juicier alternative.
