Description
A flavorful Italian-American dish featuring tender boneless chicken breasts baked in a rich and garlicky tomato sauce, topped with melted mozzarella and Parmesan cheese. Perfect for an easy, gluten-free dinner that pairs beautifully with pasta or crusty bread.
Ingredients
Chicken
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
Tomato Sauce
- 4 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, drained slightly
- 1/4 cup tomato paste
- 1 teaspoon dried Italian seasoning
Cheese and Garnish
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- Chopped fresh basil or parsley for garnish
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (200°C) and lightly grease a baking dish to prevent sticking and ease cleanup.
- Sauté Garlic: In a skillet over medium heat, warm the olive oil and sauté the minced garlic until fragrant, about 1 minute, making sure it does not burn to retain its sweet flavor.
- Make Sauce: Stir in the diced tomatoes, tomato paste, Italian seasoning, salt, black pepper, and optional crushed red pepper flakes into the garlic oil. Simmer the mixture for 5–7 minutes, allowing the sauce to thicken slightly and meld the flavors.
- Assemble and Bake: Place the chicken breasts in the prepared baking dish, then pour the tomato garlic sauce evenly over the top, ensuring the chicken is well coated. Bake uncovered for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Add Cheese: Remove the baking dish from the oven and sprinkle shredded mozzarella and grated Parmesan cheese evenly over the chicken breasts. Return to the oven and bake for an additional 5–7 minutes until the cheese is melted, bubbly, and lightly golden.
- Rest and Garnish: Let the chicken rest for a few minutes after baking to retain its juices. Garnish with chopped fresh basil or parsley before serving to add a fresh, vibrant touch.
Notes
- Serve this dish over pasta, rice, or with crusty bread to soak up the delicious tomato sauce.
- You can substitute chicken thighs for chicken breasts if you prefer darker, juicier meat.
- For a spicier dish, increase the red pepper flakes or add a pinch of cayenne pepper.
- Leftovers keep well refrigerated for up to 3 days and can be reheated gently in the oven or microwave.
