Pasta

  • 12 ounces elbow macaroni

Sauce

  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Cheese

  • 1 1/2 cups grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated sharp cheddar cheese

Instructions

  1. Cook Pasta: Boil a large pot of salted water and cook the elbow macaroni according to package directions until al dente. Drain the pasta and set it aside.
  2. Sauté Garlic: In the same pot, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1 to 2 minutes until fragrant, taking care not to brown it.
  3. Make Roux: Whisk in the all-purpose flour and cook for about 1 minute to eliminate the raw flour taste and form a roux.
  4. Add Dairy: Slowly pour in the whole milk and heavy cream while whisking constantly to ensure a smooth sauce without lumps.
  5. Season and Simmer: Stir in salt, black pepper, and garlic powder. Bring the sauce to a gentle simmer and cook until it thickens slightly, about 3 to 5 minutes.
  6. Melt Cheese: Reduce heat to low and add the grated Parmesan, shredded mozzarella, and sharp cheddar cheese. Stir continuously until all cheese melts and the sauce is smooth and creamy.
  7. Combine Pasta and Sauce: Return the cooked macaroni to the pot and stir well to evenly coat the pasta with the cheese sauce.
