Description

These Garlic Parmesan Hasselback Potatoes are a delicious twist on classic baked potatoes. Crispy on the outside and tender on the inside, flavored with garlic, butter, and Parmesan cheese. Perfect as a side dish for any meal.


Ingredients

Potatoes:

  • 4 medium russet potatoes

Garlic Butter Mixture:

  • 3 tablespoons olive oil
  • 3 tablespoons melted butter
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Additional Toppings:

  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C).
  2. Prepare the potatoes: Wash and scrub the potatoes. Slice thinly across the width, stopping just before cutting all the way through.
  3. Make the garlic butter mixture: Mix olive oil, melted butter, minced garlic, salt, pepper, and thyme in a small bowl.
  4. Coat the potatoes: Brush the garlic butter mixture over the potatoes, ensuring it gets between the slices. Bake for 45–50 minutes.
  5. Add toppings: Sprinkle Parmesan cheese over the potatoes and bake for an additional 10–15 minutes until crispy.
  6. Garnish and serve: Garnish with chopped parsley and serve hot.
