Ingredients
Meatloaf Ingredients
- 1.5 lbs ground chicken
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese (plus extra for topping)
- 3 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 1 tbsp fresh parsley, chopped
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing a loaf pan.
- Mix the Meatloaf: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and black pepper. Mix everything gently until just combined to avoid making the mixture tough.
- Shape and Bake: Shape the mixture into a loaf on the prepared baking sheet or press it evenly into the loaf pan. Place it in the oven and bake for 35 to 40 minutes, until fully cooked and firm to the touch.
- Add the Cheese: Take the meatloaf out of the oven and sprinkle additional shredded mozzarella cheese evenly over the top. Return it to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly.
- Serve: Allow the meatloaf to rest for 5 minutes before slicing. Garnish with freshly chopped parsley and serve warm with your favorite side dishes.
Notes
- Use fresh breadcrumbs for a lighter texture or panko breadcrumbs for extra crunch.
- Make sure not to overmix the meatloaf mixture to keep it tender.
- Check the internal temperature of the meatloaf; it should reach 165°F (74°C) for safe consumption.
- Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
- Pair with mashed potatoes, steamed vegetables, or a fresh salad for a complete meal.
