Description

This Garlic Mushroom Cauliflower Skillet is a flavorful and healthy side dish that’s quick and easy to make. With a delicious mix of garlic, mushrooms, and cauliflower, this dish is perfect for a low-carb meal option.


Ingredients

Cauliflower:

  • 1 medium head cauliflower (cut into florets)

Other Ingredients:

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 10 oz mushrooms (sliced)
  • 1/2 teaspoon thyme (dried or fresh)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice (optional)
  • Grated Parmesan for garnish (optional)


Instructions

  1. Heat Olive Oil: Heat olive oil in a large skillet over medium-high heat.
  2. Sauté Cauliflower: Add cauliflower florets and sauté for 5–7 minutes until slightly golden and tender-crisp.
  3. Cook Mushrooms: Push cauliflower to the side, add butter and garlic, then stir in mushrooms and cook until browned.
  4. Season and Serve: Season with thyme, salt, and pepper. Just before serving, stir in lemon juice and parsley. Garnish with Parmesan if desired.

Notes

  • For a vegan version, use plant-based butter and skip the Parmesan.
  • This dish can be served over rice, pasta, or with crusty bread.
