Ingredients
Cauliflower:
- 1 medium head cauliflower (cut into florets)
Other Ingredients:
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 10 oz mushrooms (sliced)
- 1/2 teaspoon thyme (dried or fresh)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice (optional)
- Grated Parmesan for garnish (optional)
Instructions
- Heat Olive Oil: Heat olive oil in a large skillet over medium-high heat.
- Sauté Cauliflower: Add cauliflower florets and sauté for 5–7 minutes until slightly golden and tender-crisp.
- Cook Mushrooms: Push cauliflower to the side, add butter and garlic, then stir in mushrooms and cook until browned.
- Season and Serve: Season with thyme, salt, and pepper. Just before serving, stir in lemon juice and parsley. Garnish with Parmesan if desired.
Notes
- For a vegan version, use plant-based butter and skip the Parmesan.
- This dish can be served over rice, pasta, or with crusty bread.
