Description

Ingredients

For the Garlic Mushrooms:

  • 1 tbsp olive oil
  • 1 tbsp unsalted vegan butter or regular butter
  • 8 oz cremini or white mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme or 1 tsp fresh thyme

For the Sandwich:

  • 4 slices sourdough or artisan bread
  • 1 cup shredded mozzarella or dairy-free cheese
  • 2 tbsp mayonnaise or softened butter for spreading

Instructions

  1. Sauté the Mushrooms: In a skillet over medium heat, heat olive oil and butter. Sauté mushrooms for 5–7 minutes until browned. Add garlic, salt, pepper, and thyme, cook for 1–2 minutes.
  2. Assemble the Sandwiches: Spread mayo or butter on one side of each bread slice. Layer cheese, sautéed mushrooms, more cheese on two slices. Top with the other slices, buttered side out.
  3. Grill the Sandwiches: Heat a skillet over medium heat. Grill each sandwich for 3–4 minutes per side until golden brown and cheese is melted. Let rest before slicing.
