Description

A delicious and savory Garlic Miso Pasta recipe that combines the rich flavors of miso with garlic-infused buttery noodles, topped with scallions and Parmesan. This Japanese-inspired dish is easy to make and perfect for a quick and flavorful meal.


Ingredients

Spaghetti:

  • 8 oz spaghetti or pasta of choice

Miso Butter Sauce:

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 5 garlic cloves (thinly sliced)
  • 1 tablespoon white or yellow miso paste
  • 1/4 cup reserved pasta water
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon red pepper flakes (optional)

For Serving:

  • 2 tablespoons chopped scallions or chives
  • Grated Parmesan or toasted sesame seeds for topping (optional)

Instructions

  1. Cook the Pasta: Boil the pasta until al dente, then drain and reserve 1/4 cup of pasta water.
  2. Prepare the Miso Butter Sauce: In a skillet, sauté garlic in butter and olive oil until fragrant. Stir in miso paste, soy sauce, rice vinegar, and red pepper flakes.
  3. Combine: Add the cooked pasta and reserved water to the skillet. Toss until coated.
  4. Finish and Serve: Remove from heat, top with scallions and Parmesan or sesame seeds. Serve hot.

Notes

  • For a gluten-free version, use gluten-free pasta and tamari.
  • Enhance with sautéed mushrooms, spinach, or tofu for added texture and flavor.
