Ingredients
Spaghetti:
- 8 oz spaghetti or pasta of choice
Miso Butter Sauce:
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 5 garlic cloves (thinly sliced)
- 1 tablespoon white or yellow miso paste
- 1/4 cup reserved pasta water
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/4 teaspoon red pepper flakes (optional)
For Serving:
- 2 tablespoons chopped scallions or chives
- Grated Parmesan or toasted sesame seeds for topping (optional)
Instructions
- Cook the Pasta: Boil the pasta until al dente, then drain and reserve 1/4 cup of pasta water.
- Prepare the Miso Butter Sauce: In a skillet, sauté garlic in butter and olive oil until fragrant. Stir in miso paste, soy sauce, rice vinegar, and red pepper flakes.
- Combine: Add the cooked pasta and reserved water to the skillet. Toss until coated.
- Finish and Serve: Remove from heat, top with scallions and Parmesan or sesame seeds. Serve hot.
Notes
- For a gluten-free version, use gluten-free pasta and tamari.
