Ingredients
Chicken
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Carrots
- 4 large carrots, peeled and sliced into sticks
- 1 tablespoon honey
- 1 tablespoon lemon juice
- Pinch of salt
Garnish
- Chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the chicken and carrots.
- Prepare Herb Mixture: In a small bowl, combine olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Mix well to create a flavorful herb rub.
- Season Chicken: Rub the herb mixture evenly over both sides of the chicken breasts to ensure full flavor coverage.
- Arrange on Baking Sheet: Place the seasoned chicken breasts on a baking sheet. In a separate bowl, toss the carrot sticks with honey, lemon juice, and a pinch of salt.
- Add Carrots: Spread the coated carrots around the chicken breasts on the baking sheet, spacing them out evenly for proper roasting.
- Bake: Bake in the preheated oven for 25 to 30 minutes, or until the chicken registers an internal temperature of 165°F (74°C) and the carrots become tender and caramelized.
- Rest Chicken: Remove the baking sheet from the oven and let the chicken rest for 5 minutes before slicing to retain juices.
- Serve: Slice the chicken breasts and serve alongside the roasted carrots. Garnish with chopped fresh parsley if desired for a fresh, herbal finish.
Notes
- For added flavor, marinate the chicken in the herb mixture for 1–2 hours before cooking.
- You can substitute the carrots with parsnips or sweet potatoes for variety.
- Ensure chicken is cooked to an internal temperature of 165°F for safety.
- Use fresh herbs if available for enhanced aroma.
