- 2 pounds Yukon Gold potatoes (peeled and cut into chunks)
- ½ cup whole milk
- ¼ cup sour cream
- 2 tablespoons butter
- Salt and pepper to taste
For the glazed carrots:
- 1 pound baby carrots
- 1 tablespoon butter
- 1 tablespoon honey
- ½ teaspoon salt
- ¼ teaspoon cinnamon
Instructions
- Season the chicken: Season chicken breasts with salt, pepper, garlic, thyme, rosemary, and parsley.
- Prepare the mashed potatoes: Boil potatoes until tender, then drain and mash with milk, sour cream, butter, salt, and pepper.
- Glaze the carrots: Cook carrots in butter, honey, salt, and cinnamon until tender and glazed.
- Serve the chicken with mashed potatoes and glazed carrots. Drizzle any leftover garlic herb butter from the skillet over the top for extra flavor.
