Description
Garlic Herb Chicken with Lemon Orzo is a flavorful, savory dish combining tender chicken marinated in garlic and herbs, served over a bed of zesty lemon-infused orzo pasta. A perfect balance of protein and carbs, this dish is fresh, light, and satisfying.
Ingredients
- 4 boneless, skinless chicken breasts
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tbsp fresh thyme, chopped
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh parsley, chopped
- 1 lemon, zested and juiced
- Salt and pepper, to taste
- 1 1/2 cups orzo pasta
- 4 cups chicken broth
- 1 tbsp butter
- 1/4 cup Parmesan cheese, grated
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- In a bowl, combine olive oil, garlic, thyme, rosemary, parsley, lemon zest, lemon juice, salt, and pepper. Stir to create a marinade.
- Place the chicken breasts in the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes in the refrigerator.
- Meanwhile, cook the orzo: In a large pot, bring chicken broth to a boil and add the orzo. Cook according to package instructions, about 8-10 minutes, until al dente.
- Drain the orzo and return it to the pot. Stir in butter, Parmesan cheese, and fresh parsley. Season with salt and pepper to taste. Keep warm.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes per side or until fully cooked and golden brown. Ensure internal temperature reaches 165°F (75°C).
- Serve the garlic herb chicken on top of the lemon orzo, garnished with fresh parsley.
Notes
- Marinating the chicken for at least 30 minutes will enhance the flavor.
- For a more tangy flavor, add extra lemon juice to the orzo.
- You can substitute the chicken broth with vegetable broth for a lighter version.
- This dish pairs well with a simple side salad or steamed vegetables.
