Ingredients
Mashed Potato Puffins:
- 2 cups mashed potatoes (preferably chilled)
- 2 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh chives
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Nonstick cooking spray
Instructions
- Preheat the Oven: Preheat the oven to 400°F and lightly grease a standard 12-cup muffin tin with nonstick cooking spray.
- Prepare the Mixture: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, chives, garlic, salt, and pepper. Mix until fully combined and smooth.
- Fill the Muffin Cups: Spoon the mixture evenly into the muffin cups, filling each about 3/4 full. Use the back of a spoon to gently level the tops.
- Bake: Bake for 20–25 minutes, or until puffed, golden, and lightly crisp on top.
- Cool and Serve: Let cool in the pan for 5 minutes before removing. Serve warm as a side or appetizer.
Notes
- Great way to use up leftover mashed potatoes!
- You can add crumbled bacon, finely chopped green onions, or swap cheddar for Gruyère.
