Description

These Garlic Chive Mashed Potato Puffins are a delightful way to repurpose leftover mashed potatoes into a flavorful and portable dish. Easy to make and versatile, these savory puffins are perfect as a side dish or appetizer.


Ingredients

Mashed Potato Puffins:

  • 2 cups mashed potatoes (preferably chilled)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh chives
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F and lightly grease a standard 12-cup muffin tin with nonstick cooking spray.
  2. Prepare the Mixture: In a large bowl, combine the mashed potatoes, eggs, cheddar cheese, Parmesan, chives, garlic, salt, and pepper. Mix until fully combined and smooth.
  3. Fill the Muffin Cups: Spoon the mixture evenly into the muffin cups, filling each about 3/4 full. Use the back of a spoon to gently level the tops.
  4. Bake: Bake for 20–25 minutes, or until puffed, golden, and lightly crisp on top.
  5. Cool and Serve: Let cool in the pan for 5 minutes before removing. Serve warm as a side or appetizer.
