  • 1 pound fresh okra, trimmed and halved lengthwise

  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • juice of ½ lemon


Instructions

  1. Preheat the oven: Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Prepare the okra: In a large bowl, toss the okra with olive oil, garlic, chili powder, smoked paprika, red pepper flakes (if using), salt, and black pepper until evenly coated.
  3. Roast the okra: Spread the okra in a single layer on the prepared baking sheet. Roast for 18 to 20 minutes, tossing once halfway through, until crisp on the edges and lightly browned.
