Instructions

  1. Boil the Potatoes: Start by boiling the peeled and cubed Yukon Gold potatoes in a large pot of salted water for 15–20 minutes, or until they are fork-tender. Drain the potatoes thoroughly.
  2. Mash the Potatoes: While the potatoes are still warm, mash them with the unsalted butter and milk or heavy cream. Season with salt and black pepper to taste until the mashed potatoes are smooth, creamy, and well-seasoned. Set aside and keep warm.
  3. Sear the Steak Bites: Heat the olive oil in a large skillet over medium-high heat. Season the sirloin steak cubes generously with salt and black pepper. Sear the steak bites in batches, cooking each side for 2–3 minutes until browned and cooked to your desired level of doneness. Remove the steak from the skillet and set aside.
