Ingredients

Steak Bites

  • 1 lb (450 g) sirloin steak, cut into bite-sized cubes
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp smoked paprika (optional)

Parmesan Pasta

  • 8 oz (225 g) fettuccine or spaghetti
  • 1 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp ground nutmeg (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat.
  3. Sear the Steak: Season the steak bites with salt, pepper, and smoked paprika if using. Sear the steak cubes in the hot skillet for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
  4. Make the Garlic Butter: In the same skillet, stir in the unsalted butter and minced garlic, sautéing for 1 minute until fragrant. Return the steak bites to the skillet, toss them in the garlic butter sauce, then remove the skillet from heat.
  5. Make the Parmesan Sauce: In a clean skillet or the same pan wiped clean, melt the butter and sauté the minced garlic for 1 minute. Stir in the heavy cream and bring to a gentle simmer. Gradually whisk in the freshly grated Parmesan cheese until smooth and creamy. Season with ground nutmeg, salt, and pepper to taste.
  6. Combine: Add the cooked pasta to the Parmesan sauce, stirring well to combine. If the sauce is too thick, gradually stir in the reserved pasta water to reach desired consistency.
