Ingredients
Steak Bites
- 1 lb (450 g) sirloin steak, cut into bite-sized cubes
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp smoked paprika (optional)
Parmesan Pasta
- 8 oz (225 g) fettuccine or spaghetti
- 1 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/4 tsp ground nutmeg (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat.
- Sear the Steak: Season the steak bites with salt, pepper, and smoked paprika if using. Sear the steak cubes in the hot skillet for 2-3 minutes per side until golden brown. Remove from skillet and set aside.
- Make the Garlic Butter: In the same skillet, stir in the unsalted butter and minced garlic, sautéing for 1 minute until fragrant. Return the steak bites to the skillet, toss them in the garlic butter sauce, then remove the skillet from heat.
- Make the Parmesan Sauce: In a clean skillet or the same pan wiped clean, melt the butter and sauté the minced garlic for 1 minute. Stir in the heavy cream and bring to a gentle simmer. Gradually whisk in the freshly grated Parmesan cheese until smooth and creamy. Season with ground nutmeg, salt, and pepper to taste.
- Combine: Add the cooked pasta to the Parmesan sauce, stirring well to combine. If the sauce is too thick, gradually stir in the reserved pasta water to reach desired consistency.
- Serve: Plate the creamy Parmesan pasta and top with the garlic butter steak bites. Garnish with chopped fresh parsley and serve immediately for best flavor.
Notes
- Use sirloin steak for tender and flavorful steak bites.
- Reserve pasta water to help thin the sauce without losing flavor.
- Adjust seasoning with salt, pepper, and smoked paprika based on your taste preference.
- Do not overcook the steak to keep it juicy and tender.
- Fresh parsley adds a nice color contrast and fresh flavor when garnishing.
- For a lighter dish, substitute heavy cream with half-and-half but sauce will be less rich.
