Ingredients

Steak Bites

  • 1 lb (450 g) sirloin steak, cut into bite-sized cubes
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp smoked paprika (optional)

Pasta

  • 8 oz (225 g) fettuccine or spaghetti

Parmesan Cream Sauce

  • 1 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/4 tsp ground nutmeg (optional)
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat. Season steak cubes with salt, pepper, and smoked paprika if using.
  3. Sear the Steak: Sear the steak bites in the skillet for 2-3 minutes per side until golden brown and cooked to desired doneness. Remove from skillet and set aside.
  4. Make the Garlic Butter: In the same skillet, stir in 2 tablespoons of unsalted butter and minced garlic. Sauté the garlic for 1 minute until fragrant.
  5. Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss them in the garlic butter mixture. Remove from heat and set steak aside.
  6. Make the Parmesan Sauce: Add 1 tablespoon unsalted butter and minced garlic to the skillet and sauté for 1 minute. Pour in heavy cream and bring to a gentle simmer. Gradually whisk in freshly grated Parmesan cheese until the sauce is smooth and creamy. Season with ground nutmeg (if using), salt, and pepper to taste.
  7. Combine Sauce and Pasta: Add the cooked pasta to the skillet with the Parmesan sauce. Gradually stir in reserved pasta water as needed to loosen the sauce and coat the pasta evenly.
  8. Serve: Plate the creamy Parmesan pasta topped with garlic butter steak bites. Garnish with freshly chopped parsley and serve immediately.

Notes

  • Use sirloin steak for the best balance of tenderness and flavor.
  • Reserve pasta water helps adjust sauce consistency, so don’t discard it.
  • Smoked paprika is optional but adds a nice depth of smoky flavor.
  • For a lighter version, substitute heavy cream with half-and-half, though sauce may be less rich.
  • Ensure steak bites are cut uniformly for even cooking.
  • Use freshly grated Parmesan for optimal flavor and texture.
