Ingredients
Steak Bites
- 1 lb (450 g) sirloin steak, cut into bite-sized cubes
- 2 tbsp unsalted butter
- 3 garlic cloves, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp smoked paprika (optional)
Pasta
- 8 oz (225 g) fettuccine or spaghetti
Parmesan Cream Sauce
- 1 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/4 tsp ground nutmeg (optional)
- Salt and pepper, to taste
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
- Prepare the Steak Bites: Heat olive oil in a skillet over medium-high heat. Season steak cubes with salt, pepper, and smoked paprika if using.
- Sear the Steak: Sear the steak bites in the skillet for 2-3 minutes per side until golden brown and cooked to desired doneness. Remove from skillet and set aside.
- Make the Garlic Butter: In the same skillet, stir in 2 tablespoons of unsalted butter and minced garlic. Sauté the garlic for 1 minute until fragrant.
- Toss Steak in Garlic Butter: Return the steak bites to the skillet and toss them in the garlic butter mixture. Remove from heat and set steak aside.
- Make the Parmesan Sauce: Add 1 tablespoon unsalted butter and minced garlic to the skillet and sauté for 1 minute. Pour in heavy cream and bring to a gentle simmer. Gradually whisk in freshly grated Parmesan cheese until the sauce is smooth and creamy. Season with ground nutmeg (if using), salt, and pepper to taste.
- Combine Sauce and Pasta: Add the cooked pasta to the skillet with the Parmesan sauce. Gradually stir in reserved pasta water as needed to loosen the sauce and coat the pasta evenly.
- Serve: Plate the creamy Parmesan pasta topped with garlic butter steak bites. Garnish with freshly chopped parsley and serve immediately.
Notes
- Use sirloin steak for the best balance of tenderness and flavor.
- Reserve pasta water helps adjust sauce consistency, so don’t discard it.
- Smoked paprika is optional but adds a nice depth of smoky flavor.
- For a lighter version, substitute heavy cream with half-and-half, though sauce may be less rich.
- Ensure steak bites are cut uniformly for even cooking.
- Use freshly grated Parmesan for optimal flavor and texture.
