- 1 cup cheddar cheese, shredded

Instructions
- Prepare the Potatoes: Boil the baby potatoes in salted water until they are tender when pierced with a fork. Drain the potatoes and let them cool slightly.
- Smash and Cook Potatoes: Preheat a griddle or skillet over medium-high heat. Lightly smash each potato to flatten it slightly. Drizzle with olive oil and season with salt and pepper. Place on the griddle and cook until the potatoes are golden and crispy on the bottoms, about 5-7 minutes per side.
