Description

This Garlic Butter Shrimp and Rice Stack is a flavorful and elegant seafood dish combining succulent shrimp sautéed in a garlic butter sauce with perfectly cooked jasmine rice. Quick to prepare and rich in taste, it’s an ideal main course for a weeknight dinner or special occasion, featuring zesty lemon juice and fresh parsley for a bright finish.

Ingredients

Shrimp and Garlic Butter

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cloves garlic (minced)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Juice of 1/2 lemon
  • 2 tablespoons chopped fresh parsley

Rice

  • 2 cups cooked white or jasmine rice

Instructions

  1. Season the Shrimp: Pat the shrimp dry with paper towels to remove excess moisture. Season them evenly with salt, black pepper, and paprika to enhance their natural flavor.
  2. Heat the Skillet: Place a large skillet over medium heat. Add olive oil and unsalted butter, allowing the butter to melt and become foamy, which will create a rich base for cooking the shrimp.
  3. Sauté Garlic: Add minced garlic to the skillet and cook for about 1 minute until fragrant, ensuring the garlic doesn’t burn for a perfect savory aroma.
  4. Cook the Shrimp: Arrange the shrimp in a single layer in the skillet. Cook for 2 to 3 minutes on each side or until the shrimp turn pink and become opaque, indicating they are properly cooked.
  5. Add Lemon and Parsley: Squeeze the juice of half a lemon over the cooked shrimp and stir in the chopped fresh parsley to add brightness and freshness to the dish.
  6. Prepare the Rice Stack: Lightly grease a measuring cup or mold and press 1/2 cup of warm cooked rice into it to form a compact stack. Carefully invert the mold onto a serving plate to release the rice stack.
  7. Assemble and Serve: Top the rice stack with a generous portion of the garlic butter shrimp. Spoon some of the flavorful garlic butter sauce from the pan over the shrimp before serving to enhance the dish’s moisture and taste.

Notes

  • For enhanced flavor, stir some chopped green onions into the cooked rice before assembling the stacks.
  • You can substitute white rice with brown rice or cauliflower rice for a healthier, lower-carbohydrate option.
