Ingredients

Chicken

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Italian seasoning

Pasta & Sauce

  • 8 ounces pasta such as penne or fettuccine
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water, as needed
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Cook the pasta. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
  2. Cook the chicken. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken pieces and season with salt, pepper, paprika, and Italian seasoning. Cook until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Prepare the garlic butter sauce. In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and cook briefly until fragrant, about 30 seconds to 1 minute. Reduce heat to medium-low.
  4. Make the creamy sauce. Stir in the heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth. If the sauce is too thick, thin it out by adding reserved pasta water a little at a time until desired consistency is reached.
  5. Combine pasta and chicken. Return cooked pasta and chicken to the skillet. Toss everything well to coat in the creamy garlic butter sauce.
  6. Serve and garnish. Remove skillet from heat and garnish with chopped fresh parsley. Serve immediately while warm.
