Ingredients
Chicken
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon Italian seasoning
Pasta & Sauce
- 8 ounces pasta such as penne or fettuccine
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water, as needed
- 1 tablespoon chopped fresh parsley
Instructions
- Cook the pasta. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining the pasta.
- Cook the chicken. Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add chicken pieces and season with salt, pepper, paprika, and Italian seasoning. Cook until golden brown and cooked through. Remove chicken from skillet and set aside.
- Prepare the garlic butter sauce. In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and cook briefly until fragrant, about 30 seconds to 1 minute. Reduce heat to medium-low.
- Make the creamy sauce. Stir in the heavy cream and bring to a gentle simmer. Add Parmesan cheese and stir until melted and smooth. If the sauce is too thick, thin it out by adding reserved pasta water a little at a time until desired consistency is reached.
- Combine pasta and chicken. Return cooked pasta and chicken to the skillet. Toss everything well to coat in the creamy garlic butter sauce.
- Serve and garnish. Remove skillet from heat and garnish with chopped fresh parsley. Serve immediately while warm.
Notes
- For extra richness, add an additional tablespoon of butter or a splash more cream to the sauce.
- Substitute half-and-half for a lighter cream sauce option.
- Add vegetables like spinach or mushrooms for added nutrition and texture.
- Ensure chicken is cooked through to an internal temperature of 165°F (74°C) for safety.
- Use freshly grated Parmesan cheese for the best melt and flavor.
