Ingredients
Chicken
- 4 boneless, skinless chicken thighs
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- Salt and pepper, to taste
Potatoes
- 1 lb baby potatoes, quartered
Garlic Butter Sauce
- 5 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 tablespoon olive oil
Garnish
- Fresh parsley, chopped
Instructions
- Season Chicken: Season the boneless, skinless chicken thighs evenly with salt, pepper, paprika, and Italian seasoning. Set aside to allow the flavors to meld.
- Cook Potatoes: Heat 1 tablespoon of olive oil and 2 tablespoons of unsalted butter in a large skillet over medium heat. Add the quartered baby potatoes and cook for 10-12 minutes, stirring occasionally, until they are golden brown and tender when pierced with a fork. Remove the potatoes from the skillet and set aside.
- Cook Chicken: In the same skillet, melt the remaining 3 tablespoons of butter over medium heat. Add the seasoned chicken thighs and cook for 6-7 minutes on each side, or until they develop a golden crust and are cooked through (internal temperature reaches 165°F). Remove the chicken and set aside.
- Sauté Garlic: Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned to avoid bitterness.
- Combine and Toss: Return the cooked potatoes and chicken thighs to the skillet. Toss them gently in the garlic butter sauce, allowing the flavors to combine and warm together for 2-3 minutes.
- Garnish and Serve: Sprinkle freshly chopped parsley over the dish for a fresh pop of color and flavor. Serve the garlic butter chicken and potatoes hot directly from the skillet.
Notes
- You can substitute chicken thighs with chicken breasts, but cooking time may vary slightly.
- For crispier potatoes, parboil them for 5 minutes before frying.
- Adjust seasoning according to taste; add crushed red pepper flakes for a spicy kick.
- Use fresh herbs like thyme or rosemary in addition to parsley for added aroma.
- Make sure not to overcook the garlic to prevent it from turning bitter.
