- 1 pound ground beef
- 2 tablespoons unsalted butter
- 4 cloves garlic (minced)
- 1 small onion (diced)
- 1 cup long-grain white rice (uncooked)
- 2 1/4 cups beef broth
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1 tablespoon chopped fresh parsley (optional for garnish)
Instructions
- In a large skillet over medium heat, melt the butter. Add the garlic and onion and sauté for 2 to 3 minutes until fragrant and softened.
- Add the ground beef and cook until browned and no longer pink, breaking it apart with a spatula. Drain any excess grease.
- Stir in the uncooked rice, beef broth, salt, pepper, paprika, and red pepper flakes if using. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18 to 20 minutes or until the rice is tender and most of the liquid is absorbed.
- Stir in the heavy cream, cheddar cheese, and Parmesan cheese until melted and creamy. Simmer for another 2 to 3 minutes, uncovered, to thicken slightly.
- Garnish with chopped parsley and serve hot.
