Description

Funeral Potatoes, also known as cheesy hash brown casserole, are a classic comfort food dish perfect for gatherings or potlucks. Creamy and cheesy with a crunchy topping, this potato casserole is sure to be a crowd-pleaser.


Ingredients

For the Casserole:

  • 1 (30 oz) bag frozen shredded hash browns, thawed
  • 1/2 cup unsalted butter, melted (divided)
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 2 cups sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups shredded cheddar cheese

For the Topping:

  • 1 1/2 cups crushed cornflakes

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Mix the Casserole: In a large bowl, combine cream of chicken soup, sour cream, 1/4 cup melted butter, garlic powder, onion powder, salt, and pepper. Add hash browns and cheddar cheese, mix well, and spread evenly in the baking dish.
  3. Prepare the Topping: Mix crushed cornflakes with remaining melted butter and sprinkle over the casserole.
  4. Bake: Bake for 40–45 minutes until golden and bubbly.
