Description

These Fudgy Mini Brownie Bites are rich, chocolatey, and perfectly portioned for a delightful treat. Made with melted butter, cocoa powder, and a generous amount of mini chocolate chips, these bite-sized brownies bake quickly and are easy to pop out of a mini muffin tin for sharing or snacking.


Ingredients

Brownie Batter

  • 1/2 cup butter, melted (1 stick)
  • 1 cup granulated white sugar
  • 2 large eggs
  • 2/3 cup cocoa powder, spooned and leveled
  • 1/2 cup all-purpose flour, spooned and leveled
  • 1 cup mini chocolate chips, divided


Instructions

  1. Get prepped: Preheat your oven to 350°F (175°C). Spray a mini muffin tin generously with baking spray or line it with mini muffin liners to prevent sticking and ensure easy removal of the brownie bites.
  2. Make the brownie batter: In a large mixing bowl, whisk the melted butter and granulated sugar together until well combined. Add the eggs and whisk until the mixture becomes smooth and creamy. Sift in the cocoa powder and flour, folding them into the wet ingredients gently until just combined. Carefully fold in 3/4 cup of the mini chocolate chips, reserving the remaining chips for topping.
  3. Scoop and bake: Using a small cookie scoop, evenly portion the brownie batter into each cup of the prepared mini muffin tin. Sprinkle the remaining mini chocolate chips on top of each portion for an extra chocolatey finish. Bake in the preheated oven for 14 to 16 minutes, or until a toothpick inserted in the center comes out with moist crumbs but no raw batter.
  4. Cool and remove: Allow the mini brownie bites to cool completely in the tin to set properly. Once cooled, gently hold the sides of each brownie bite and twist back and forth to loosen it from the tin. If some don’t release easily, carefully run a butter knife around the edges to help, though this may slightly alter their shape.
