Ingredients
Main Cookie Dough:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup semisweet chocolate chips
Ganache Topping:
- 1/2 cup heavy cream
- 1 cup semisweet chocolate chips
Decoration:
- 1/4 cup rainbow candy-coated chocolate chips or rainbow sprinkles
Instructions
- Preheat and Prepare: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Mix Wet Ingredients: In a large bowl, whisk melted butter and granulated sugar. Add eggs and vanilla, whisk until smooth.
- Add Dry Ingredients: Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined. Fold in chocolate chips.
- Bake: Scoop dough onto baking sheets. Bake for 10–12 minutes until edges are set. Cool on the pan.
- Make Ganache: Heat cream until simmering, pour over chocolate chips. Stir until smooth.
- Top Cookies: Spread ganache over cooled cookies. Sprinkle with candy-coated chocolate chips or rainbow sprinkles. Let ganache set before serving.
