Description

Indulge in these decadent Fudgy Black Bean Brownie Bites that are rich in chocolate flavor and surprisingly made with black beans. These mini brownies are the perfect guilt-free treat for any occasion!


Ingredients

Ingredients:

  • 1 (15-ounce) can black beans (drained and rinsed)
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1/4 cup coconut oil (melted)
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips (plus extra for topping, optional)


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin or line with mini paper liners.
  2. In a food processor or blender, combine black beans, eggs, maple syrup, coconut oil, cocoa powder, vanilla extract, baking powder, and salt. Blend until smooth and creamy.

  3. Fold in the mini chocolate chips.
  4. Spoon batter evenly into the mini muffin tin, filling each cup about 3/4 full.
  5. Sprinkle a few extra chocolate chips on top if desired.
  6. Bake for 12–15 minutes or until the tops are set and a toothpick inserted comes out mostly clean.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container in the fridge for up to 5 days.
  • These brownies are naturally gluten-free and can be made dairy-free with dairy-free chocolate chips.
