Indulge in these decadent Fudgy Black Bean Brownie Bites that are rich in chocolate flavor and surprisingly made with black beans. These mini brownies are the perfect guilt-free treat for any occasion!

- 1 (15-ounce) can black beans (drained and rinsed)
- 2 large eggs
- 1/3 cup maple syrup or honey
- 1/4 cup coconut oil (melted)
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup mini chocolate chips (plus extra for topping, optional)
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin or line with mini paper liners.
- Fold in the mini chocolate chips.
- Spoon batter evenly into the mini muffin tin, filling each cup about 3/4 full.
- Sprinkle a few extra chocolate chips on top if desired.
- Bake for 12–15 minutes or until the tops are set and a toothpick inserted comes out mostly clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
In a food processor or blender, combine black beans, eggs, maple syrup, coconut oil, cocoa powder, vanilla extract, baking powder, and salt. Blend until smooth and creamy.

- Store in an airtight container in the fridge for up to 5 days.
- These brownies are naturally gluten-free and can be made dairy-free with dairy-free chocolate chips.
