Description

Delight in these colorful and fresh Fruit Tacos, a sweet and simple snack or dessert perfect for a quick treat. Soft flour tortillas are warmed and brushed with a cinnamon-sugar butter, then layered with whipped cream cheese, honey, and a vibrant mix of fresh fruit topped with a homemade strawberry salsa. This recipe combines creamy, sweet, and tangy flavors for a fun and easy-to-make dish that’s perfect for breakfast, brunch, or a light dessert.

Ingredients

Tortillas and Topping

  • 4 flour tortillas (soft)
  • 1 tbsp butter
  • 1 tsp cinnamon
  • 3 tbsp sugar

Fruit and Cream Cheese

  • 8 tbsp whipped cream cheese
  • 1 tbsp honey
  • 1/2 cup strawberries
  • 1/2 cup mango
  • 1 kiwi
  • 1/4 cup blueberries

Instructions

  1. Prepare the Fruit: Cut the strawberries, mango, kiwi, and blueberries into bite-sized pieces. Feel free to substitute or add your favorite fruits as desired.
  2. Make Strawberry Salsa: Place half of the strawberries into a blender or food processor with a dash of cinnamon and sugar. Purée until smooth, adding about a tablespoon of water to help blend if needed, creating a sweet strawberry salsa.
  3. Make Cinnamon Sugar Butter: Melt the butter in a small saucepan. Stir in the cinnamon and sugar until well combined to create a flavorful butter mixture.
  4. Warm Tortillas: Heat a cast iron skillet over medium heat. Warm each tortilla in the skillet until soft and pliable. Then, use a pastry brush to coat one side of each tortilla evenly with the cinnamon sugar butter mixture.
  5. Assemble Cream Cheese Layer: Spread 2 tablespoons of whipped cream cheese onto each buttered tortilla. Drizzle with honey to add a touch of sweetness and moisture.
  6. Add Fruit and Salsa: Arrange the fresh fruit over the cream cheese layer. Finally, drizzle the prepared strawberry salsa on top of the fruit to finish your vibrant, flavorful fruit tacos.

Notes

  • You can substitute any fresh fruits you prefer or have on hand, such as peaches, raspberries, or bananas.
  • Add a sprinkle of chopped nuts or granola for extra crunch if desired.
  • For a dairy-free version, use a vegan cream cheese alternative and plant-based butter.
  • Serve immediately to maintain the best texture and freshness of the tortillas and fruit.
