Description

These Frozen Yogurt Granola Cups are a delightful and healthy no-bake treat combining a crunchy granola base with creamy Greek yogurt and fresh berries. Perfect for a quick breakfast or a refreshing snack, they offer a balance of sweetness, protein, and texture without any baking involved.

Ingredients

Granola Base

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 3-4 tbsp honey (adjust to desired sweetness)
  • 1 tsp vanilla extract

Filling & Topping

  • 1 1/2 cups Greek yogurt
  • Berries of choice, for topping

Instructions

  1. Prepare Granola Dough: In a bowl, combine oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until you achieve a sticky dough. If the mixture is too dry, add small amounts of almond butter and honey until it holds together well.
  2. Form Base Layers: Line a muffin pan with muffin liners. Take portions of the granola dough and firmly press them into the bottom of each muffin cup to create a sturdy, compact base layer.
  3. Add Yogurt and Toppings: Spoon generous amounts of Greek yogurt into each prepared granola base cup. Top with fresh berries and sprinkle any leftover granola dough on top for extra crunch and texture.
  4. Freeze: Place the muffin pan in the freezer and freeze for at least 4 hours, or until the cups are fully set and firm.
  5. Serve: Remove the frozen yogurt granola cups from the freezer and let them thaw slightly for a few minutes to soften before enjoying as a cool, nutritious treat.

Notes

  • Adjust honey quantity based on your desired sweetness.
  • Use any berries of your choice, such as strawberries, blueberries, or raspberries.
  • These cups keep well in the freezer for up to 1 week.
  • For a nut-free version, substitute almond butter with sunflower seed butter.
  • Allow cups to thaw slightly before eating for a softer texture.
