Description

These Frozen Yogurt Granola Cups are a refreshing and healthy no-bake treat perfect for hot days or as a delicious snack. Featuring a crunchy granola base made from oats, cinnamon, almond butter, and honey, each cup is filled with creamy Greek yogurt and topped with fresh berries for a burst of flavor and texture. Easy to prepare and freezer-friendly, these cups make a great make-ahead dessert or breakfast option.

Ingredients

Granola Base

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 3-4 tbsp honey (adjust to desired sweetness)
  • 1 tsp vanilla extract

Filling and Toppings

  • 1 1/2 cups Greek yogurt
  • Berries of choice to top (such as blueberries, strawberries, or raspberries)

Instructions

  1. Prepare the granola base: In a bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Mix thoroughly until a sticky dough forms. If the mixture feels too dry or crumbly, add additional almond butter and honey to help it hold together well.
  2. Form the granola cups: Line a muffin pan with muffin liners. Spoon an even portion of the granola dough into the bottom of each muffin cup. Use your fingers or the back of a spoon to press the granola firmly, creating a sturdy and compact base layer.
  3. Add the filling and toppings: Spoon a generous amount of Greek yogurt on top of each granola base. Then, add fresh berries and sprinkle any leftover granola dough on top for extra crunch and texture.
  4. Freeze the cups: Place the muffin pan in the freezer and let the granola cups set for at least 4 hours or until they are fully firm and chilled.
  5. Serve and enjoy: Remove the frozen yogurt granola cups from the freezer. Let them sit at room temperature for a couple of minutes to soften slightly before enjoying this cool and refreshing treat.

Notes

  • You can substitute almond butter with peanut butter or any other nut butter of choice.
  • Adjust the sweetness by adding more or less honey according to your preference.
  • These cups can be stored in the freezer for up to one week in an airtight container.
  • Feel free to incorporate different fruits or nuts as toppings for variation.
  • Make sure to press the granola base firmly to ensure it holds together after freezing.
