Ingredients
Fruit Filling
- 2 cups peeled and diced fresh or canned peaches or apples
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 1 tablespoon water
Pie Crust
- 1 package refrigerated pie crusts (2 crusts)
- All-purpose flour for dusting
For Frying
- Vegetable oil (about 1 inch depth) for frying

- Prepare the Fruit Filling: In a small saucepan over medium heat, combine the diced peaches or apples, sugar, cinnamon, and lemon juice. Cook for 5 to 7 minutes until the fruit softens slightly. Stir in the cornstarch slurry and cook for an additional 1 to 2 minutes until the mixture thickens. Remove from heat and let the filling cool completely.
- Prepare the Pie Crusts: On a lightly floured surface, roll out the refrigerated pie crusts if needed and cut them into 4- to 5-inch circles using a round cutter or glass.
- Fill and Seal the Pies: Place about 1 tablespoon of the cooled fruit filling in the center of each dough circle. Fold the dough over to create a half-moon shape. Press the edges firmly with a fork to seal the pies completely and prevent leakage during frying.
- Heat the Oil: Pour vegetable oil into a deep skillet to a depth of about 1 inch. Heat the oil over medium heat until it reaches 350°F (175°C) for frying.
- Fry the Pies: Fry the pies in batches of 2 to 3 at a time. Cook each side for about 2 to 3 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove the pies and drain them on paper towels to remove excess oil.
- Serve: Serve the fried pies warm or at room temperature. Optionally, dust with powdered sugar or drizzle a glaze for added sweetness.
