Ingredients
Batter:
- 2 ripe bananas, cut into ½-inch thick slices
 - ½ cup all-purpose flour
 - ¼ cup cornstarch
 - ¼ teaspoon baking powder
 - ¼ teaspoon salt
 - 2 tablespoons granulated sugar
 - ½ cup cold water (plus more as needed)
 - ½ teaspoon vanilla extract
 
Additional:
- Oil for frying (vegetable or canola)
 - Powdered sugar or cinnamon sugar for topping (optional)
 
Instructions
- Batter Preparation: In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and sugar. Add cold water and vanilla extract, whisking until a smooth, thick batter forms.
 - Frying: Heat about 2 inches of oil in a deep skillet or saucepan over medium-high heat to 350°F (175°C). Dip each banana slice into the batter, coating fully, then carefully place into the hot oil.
 - Frying Continued: Fry in batches for 2–3 minutes per side, or until golden brown and crisp. Use a slotted spoon to remove the banana bites and drain on a paper towel-lined plate.
 - Serving: Dust with powdered sugar or cinnamon sugar if desired. Serve warm.
