Rice Paper Wrappers:

Cooked Vermicelli Rice Noodles:
1 cup
Shredded Lettuce or Mixed Greens:
1 cup
Julienned Carrots:
1/2 cup
Thinly Sliced Cucumber:

Red Bell Pepper Strips:

Fresh Mint Leaves:

Cooked Shrimp (halved lengthwise) or Tofu Strips:

Warm Water for Soaking Wrappers:

Instructions
- Prepare Filling Ingredients: Set all filling ingredients in separate bowls.
- Soften Rice Paper: Dip one rice paper wrapper in warm water for 10 seconds.
- Assemble Roll: Place herbs, noodles, veggies, and protein on wrapper. Roll tightly like a burrito.
- Repeat: Make more rolls with remaining ingredients.
- Serve: Enjoy with favorite dipping sauce.
Notes
- To prevent sticking, cover finished rolls with a damp towel.
- You can customize fillings with different veggies, fruits, or herbs.
