Description

Fresh Spring Rolls are a light and refreshing appetizer filled with colorful veggies, herbs, and either shrimp or tofu wrapped in delicate rice paper. These Vietnamese-inspired rolls are perfect for a healthy snack or a light meal.


Ingredients

Rice Paper Wrappers:

8 pieces

Cooked Vermicelli Rice Noodles:

1 cup

Shredded Lettuce or Mixed Greens:

1 cup

Julienned Carrots:

1/2 cup

Thinly Sliced Cucumber:

1/2 cup

Red Bell Pepper Strips:

1/2 cup

Fresh Mint Leaves:

1/2 cup

Fresh Cilantro Leaves:

1/2 cup

Cooked Shrimp (halved lengthwise) or Tofu Strips:

1/2 cup

Warm Water for Soaking Wrappers:

Instructions

  1. Prepare Filling Ingredients: Set all filling ingredients in separate bowls.
  2. Soften Rice Paper: Dip one rice paper wrapper in warm water for 10 seconds.
  3. Assemble Roll: Place herbs, noodles, veggies, and protein on wrapper. Roll tightly like a burrito.
  4. Repeat: Make more rolls with remaining ingredients.
  5. Serve: Enjoy with favorite dipping sauce.

Notes

  • To prevent sticking, cover finished rolls with a damp towel.
