- 1 cup shredded red cabbage
- 1 ripe avocado, thinly sliced

Instructions
- Prepare Ingredients: Cook and cool the rice vermicelli noodles, peel and devein the shrimp slicing them lengthwise, and prepare all vegetables and herbs by shredding, slicing, and washing as needed. Arrange all fillings assembly-style for easy rolling.
- Soften Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 5 to 10 seconds until just pliable. Avoid soaking too long to prevent tearing.
- Assemble Rolls: Lay the softened rice paper flat on a clean surface. Place a small portion of noodles, shrimp, shredded carrots, cucumber, red cabbage, avocado slices, and fresh herbs in the lower third of the wrapper, arranging them neatly for rolling.
- Roll and Seal: Fold the bottom edge of the wrapper over the filling, then fold in the sides tightly and roll it up firmly to seal. Ensure the roll is tight enough to hold together but not so tight that it breaks.
- Repeat: Repeat the softening and filling process with remaining wrappers and ingredients until all rolls are made.
- Serve: Serve the spring rolls immediately for best freshness, or cover with a damp towel until ready. Accompany with peanut sauce or sweet chili sauce for dipping.
