Instructions

  1. Prepare Pineapple Layer: In a blender, combine the frozen pineapple chunks, ¼ cup coconut water, and 1 tablespoon honey or agave syrup if using. Blend on high until the mixture is smooth and slushy, adding more liquid if necessary to achieve the desired consistency. Once blended, transfer this pineapple slush to a bowl or cup and place it in the freezer to keep chilled while preparing the strawberry layer.
  2. Prepare Strawberry Layer: Rinse the blender thoroughly. Then add the frozen strawberries, remaining coconut water, lime juice, and the remaining honey or agave syrup if using. Blend until you get a smooth and thick strawberry slush.
  3. Assemble the Slushies: To serve, spoon alternating layers of the pineapple and strawberry slush into glasses to create a pretty swirled effect.
