Description

This Fresh Peach and Blueberry Summer Salad is a delightful blend of sweet peaches, juicy blueberries, creamy goat cheese, and crunchy almonds tossed with a refreshing mint dressing. Perfect for a light and flavorsome summer meal!


Ingredients

Fresh Peach and Blueberry Summer Salad:

  • 4 ripe peaches (sliced)
  • 1 cup fresh blueberries
  • 4 cups mixed greens or baby spinach
  • 1/3 cup crumbled goat cheese or feta
  • 1/4 cup sliced almonds or chopped pecans (toasted)
  • 2 tablespoons fresh mint leaves (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 tablespoon balsamic vinegar
  • pinch of salt and pepper


Instructions

  1. In a large salad bowl, gently toss together the sliced peaches, blueberries, greens, goat cheese, almonds, and mint.
  2. In a small bowl or jar, whisk together the olive oil, honey, lemon juice, balsamic vinegar, salt, and pepper until well combined.
