Description

A light and refreshing soup made from fresh peas, perfect for spring or summer meals. It’s simple, flavorful, and can be served warm or chilled.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen green peas
  • 3 cups vegetable broth
  • 1/2 cup fresh mint leaves
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut cream (optional for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the peas and vegetable broth, bringing the mixture to a boil.
  5. Reduce the heat and simmer for 10 minutes, until peas are tender.
  6. Remove from heat and add the fresh mint leaves.
  7. Use an immersion blender or transfer to a blender to puree until smooth.
  8. Season with salt and pepper to taste.
  9. Serve warm or chilled, optionally garnished with cream.

Notes

  • For a vegan version, skip the cream or use coconut cream.
  • You can use frozen peas if fresh are not available.
  • Adjust mint to taste for a more or less herby flavor.
