Description
A light and refreshing soup made from fresh peas, perfect for spring or summer meals. It’s simple, flavorful, and can be served warm or chilled.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh or frozen green peas
- 3 cups vegetable broth
- 1/2 cup fresh mint leaves
- Salt and pepper to taste
- 1/2 cup heavy cream or coconut cream (optional for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the peas and vegetable broth, bringing the mixture to a boil.
- Reduce the heat and simmer for 10 minutes, until peas are tender.
- Remove from heat and add the fresh mint leaves.
- Use an immersion blender or transfer to a blender to puree until smooth.
- Season with salt and pepper to taste.
- Serve warm or chilled, optionally garnished with cream.
Notes
- For a vegan version, skip the cream or use coconut cream.
- You can use frozen peas if fresh are not available.
- Adjust mint to taste for a more or less herby flavor.
