Ingredients

For the Peach Sauce:
- 3 large ripe peaches, peeled and sliced
- ¼ cup brown sugar
- 1 tbsp lemon juice
- ½ tsp vanilla extract
- 1 tsp cornstarch mixed with 1 tbsp water (optional for thickening)
Instructions
- Preheat the Waffle Iron: Preheat your waffle iron according to the manufacturer’s instructions.
- Prepare the Waffle Batter: In a shallow bowl, whisk together the eggs, milk, vanilla, cinnamon, and salt. Dip each slice of bread into the mixture, soaking both sides thoroughly.
- Cook the Waffles: Grease the waffle iron with butter or nonstick spray. Place soaked bread slices onto the waffle iron and cook until golden and crisp.
- Make the Peach Sauce: In a saucepan, combine peaches, brown sugar, lemon juice, and vanilla. Cook until soft and syrupy. Thicken with cornstarch slurry if desired.
- Serve: Serve waffles hot with peach sauce on top.
