Description

This French Onion Pot Roast is a comforting and hearty dish that combines tender chuck roast with caramelized onions in a flavorful gravy. Perfect for a cozy family dinner or a special occasion.


Ingredients

Main Ingredients:

  • 34 lb chuck roast
  • 2 tablespoons olive oil

For the Onion Gravy:

  • 2 large yellow onions (thinly sliced)
  • 4 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 4 tablespoons unsalted butter

Optional:

  • Fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat oven to 325°F (163°C).
  2. Sear the Roast: Season the chuck roast with salt and pepper. Sear on all sides in a Dutch oven over medium-high heat.
  3. Caramelize Onions: In the same pot, caramelize the onions and garlic.
  4. Add Flavors: Stir in tomato paste, Worcestershire sauce, and balsamic vinegar. Deglaze with beef broth.
  5. Braise: Add herbs, return roast to the pot, cover, and braise in the oven for 3 to 3.5 hours.
  6. Finish and Serve: Remove bay leaf, garnish with parsley, and serve hot.
