Ingredients
Main Ingredients:
- 3–4 lb chuck roast
- 2 tablespoons olive oil
For the Onion Gravy:
- 2 large yellow onions (thinly sliced)
- 4 cloves garlic (minced)
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 4 tablespoons unsalted butter
Optional:
- Fresh parsley for garnish
Instructions
- Preheat the Oven: Preheat oven to 325°F (163°C).
- Sear the Roast: Season the chuck roast with salt and pepper. Sear on all sides in a Dutch oven over medium-high heat.
- Caramelize Onions: In the same pot, caramelize the onions and garlic.
- Add Flavors: Stir in tomato paste, Worcestershire sauce, and balsamic vinegar. Deglaze with beef broth.
- Braise: Add herbs, return roast to the pot, cover, and braise in the oven for 3 to 3.5 hours.
- Finish and Serve: Remove bay leaf, garnish with parsley, and serve hot.
