Ingredients
Pasta and Cheese
- 12 oz pasta (rigatoni or penne)
- 1 1/2 cups shredded Gruyère cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese
- 1/2 cup breadcrumbs (optional topping)
- 1 tablespoon melted butter (for breadcrumbs)
Onion Mixture
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 large yellow onions (thinly sliced)
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 2 cloves garlic (minced)
- 1/2 cup dry white wine (optional)
- 1 1/2 cups beef broth
- 1 cup heavy cream
Instructions
- Preheat and Prepare: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
- Cook Pasta: Cook the pasta according to package instructions until al dente. Drain well and set aside to be combined later with the sauce.
- Caramelize Onions: In a large skillet, heat butter and olive oil over medium-low heat. Add the thinly sliced onions along with sugar, salt, and black pepper. Cook slowly, stirring frequently for 25 to 30 minutes until the onions become deeply golden brown and caramelized, developing rich flavor.
- Add Flavorings: Stir in fresh or dried thyme and minced garlic, cooking for an additional minute to release their aromas. If using white wine, add it now and simmer for 2 to 3 minutes to deglaze the pan and incorporate its flavor.
- Create Sauce: Pour in the beef broth and bring the mixture to a simmer. Stir in heavy cream and half of the shredded Gruyère cheese, allowing the cheese to melt and create a luscious, creamy sauce.
- Combine Pasta and Sauce: Add the cooked pasta into the skillet and toss gently to coat the noodles evenly with the rich onion and cheese sauce.
- Assemble Casserole: Transfer the pasta mixture into the prepared baking dish. Top evenly with the remaining Gruyère, Parmesan, and mozzarella cheeses. If using, mix breadcrumbs with melted butter and sprinkle over the top for a crunchy, golden crust.
- Bake: Bake uncovered in the preheated oven for 20 to 25 minutes or until the casserole is bubbly and the top is golden brown and crispy.
- Rest and Serve: Remove from the oven and let sit for 5 minutes before serving to allow the casserole to set slightly for easier portioning and enhanced flavor.
Notes
- Gruyère cheese provides the classic French onion flavor, but Swiss cheese can be used as a substitute if needed.
- For extra flavor and texture, top the casserole with crispy fried onions after baking.
- This casserole pairs beautifully with a fresh green salad or roasted vegetables for a balanced meal.
- To make it vegetarian, substitute beef broth with vegetable broth.
