For the Casserole:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 1 can (10.5 ounces) condensed French onion soup
- 1 cup sour cream
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 3 cups cooked white rice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1/2 cup crushed French fried onions (for topping)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
- Cook the beef mixture: In a large skillet, heat olive oil. Cook onion until soft, then add garlic and ground beef. Cook until browned, drain excess grease.
- Combine ingredients: Stir in French onion soup, sour cream, cheeses, cooked rice, salt, pepper, and thyme. Mix well.
- Bake: Pour mixture into baking dish and bake uncovered for 25–30 minutes until hot. Top with crushed fried onions and bake for 5 more minutes until golden.
- Serve: Let rest for 5 minutes before serving.
