Description

This French Onion Ground Beef and Rice Casserole is a comforting and hearty dish that combines the flavors of French onion soup with cheesy goodness. Perfect for a family dinner or meal prep, this easy-to-make casserole is sure to be a hit.

Ingredients

For the Casserole:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 ounces) condensed French onion soup
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 3 cups cooked white rice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried thyme
  • 1/2 cup crushed French fried onions (for topping)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook the beef mixture: In a large skillet, heat olive oil. Cook onion until soft, then add garlic and ground beef. Cook until browned, drain excess grease.
  3. Combine ingredients: Stir in French onion soup, sour cream, cheeses, cooked rice, salt, pepper, and thyme. Mix well.
  4. Bake: Pour mixture into baking dish and bake uncovered for 25–30 minutes until hot. Top with crushed fried onions and bake for 5 more minutes until golden.
  5. Serve: Let rest for 5 minutes before serving.

Notes

  • You can use ground turkey or chicken instead of beef.
  • For a deeper onion flavor, caramelize the onions before adding garlic and beef.
  • This casserole is great for meal prep and freezes well.
