Description

French Onion Chicken & Rice is a comforting one-pan meal that combines juicy chicken breasts with caramelized onions, savory rice, and gooey melted cheese. This easy and flavorful dish is perfect for a cozy family dinner or entertaining guests.


Ingredients

Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Onion Mixture:

  • 1 tablespoon butter
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)

Rice:

  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth

To Garnish:

  • 1 cup shredded Gruyère or Swiss cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Sear the Chicken: Season chicken breasts with salt and pepper. Sear in a skillet until golden brown. Set aside.
  3. Caramelize Onions: In the same skillet, cook onions and garlic until caramelized. Add thyme.
  4. Add Rice and Broth: Stir in rice, then add chicken broth and bring to a simmer.
  5. Bake: Nestle chicken back in the pan, cover, and bake for 25–30 minutes.
  6. Add Cheese: Sprinkle cheese on top and bake uncovered for 5 minutes until melted.
  7. Garnish and Serve: Garnish with parsley before serving.

Notes

  • For richer flavor, use a mix of Gruyère and mozzarella.
  • This dish pairs well with a green salad or roasted vegetables.
