Ingredients
Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Onion Mixture:
- 1 tablespoon butter
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
Rice:
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
To Garnish:
- 1 cup shredded Gruyère or Swiss cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C).
- Sear the Chicken: Season chicken breasts with salt and pepper. Sear in a skillet until golden brown. Set aside.
- Caramelize Onions: In the same skillet, cook onions and garlic until caramelized. Add thyme.
- Add Rice and Broth: Stir in rice, then add chicken broth and bring to a simmer.
- Bake: Nestle chicken back in the pan, cover, and bake for 25–30 minutes.
- Add Cheese: Sprinkle cheese on top and bake uncovered for 5 minutes until melted.
- Garnish and Serve: Garnish with parsley before serving.
