Ingredients
Potatoes and Oil
- 1 pound Frozen Tater Tots (These add a satisfying crunch; feel free to swap with diced roasted potatoes.)
- 1 tablespoon Olive Oil (Can substitute with any neutral oil.)
Meat and Eggs
- 1 pound Breakfast Sausage (Consider using turkey sausage for a lighter option.)
- 6 large Eggs
- 1/2 cup Half and Half (Can substitute with equal parts milk and cream or just milk.)
Seasonings and Beans
- to taste Kosher Salt
- to taste Freshly Ground Black Pepper
- 1 can Refried Beans (Can substitute with black beans for a different flavor.)
Wraps and Toppings
- 4 large Flour Tortillas (Whole wheat tortillas are a nutritious substitute.)
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Roma Tomatoes, diced (Can leave out for a simpler burrito.)
- 1/4 cup Chopped Fresh Cilantro Leaves (Can substitute with green onions.)
Instructions
- Preheat and Prepare Baking Sheet: Preheat the oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking and ensure even browning of the burritos.
- Cook Tater Tots: Cook the frozen tater tots according to package instructions until they are crispy and golden brown, which usually takes about 20 minutes. Set aside and allow them to cool slightly.
- Brown Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage and cook it until browned and fully cooked through, about 3 to 5 minutes.
- Cook Eggs: In a bowl, whisk the eggs. Pour them into the skillet with the browned sausage. Cook the eggs until they are just set, then stir in the half and half to add creaminess and continue cooking until the mixture thickens. Season with kosher salt and freshly ground black pepper to taste.
- Assemble Burritos: Lay out each flour tortilla and spread refried beans down the center. Layer with crispy tater tots, cooked sausage and eggs, shredded cheddar and Monterey Jack cheeses, diced Roma tomatoes, and chopped cilantro leaves for freshness.
- Wrap Burritos: Fold each tortilla burrito-style by tucking in the sides and rolling tightly from one end to the other. Place the burritos seam-side down on the prepared baking sheet to prevent unrolling during baking.
- Bake Burritos: Bake the assembled burritos in the preheated oven for 12 to 15 minutes until they are heated through and the tortillas turn slightly golden and crisp.
- Serve or Freeze: Serve the burritos immediately while warm, or let them cool completely before placing in an airtight container to freeze for a convenient make-ahead breakfast option.
Notes
- For a lighter version, substitute breakfast sausage with turkey sausage.
- Whole wheat tortillas can be used for a healthier alternative.
- Black beans can replace refried beans to vary the flavor and texture.
- Omit tomatoes if you prefer a simpler burrito.
- Make ahead and freeze cooled burritos in an airtight container for up to 3 months.
- Reheat frozen burritos in the oven or microwave until hot.
