Ingredients
For the Burritos
- 4 large flour tortillas (or gluten-free tortillas)
- 6 large eggs
- 1/2 cup milk (or plant-based milk)
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1/2 cup spinach, chopped
- 1/2 cup shredded cheese (cheddar, mozzarella, or dairy-free)
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
For Serving (Optional)
- Salsa
- 1 tablespoon fresh cilantro, chopped
Instructions
- Whisk the Eggs: In a bowl, whisk together the eggs, milk, ground cumin, salt, and pepper until fully combined and slightly frothy.
- Sauté the Veggies: Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper and cook for 3 to 4 minutes until they begin to soften and become fragrant.
- Add Spinach: Stir the chopped spinach into the skillet and cook for an additional 1 to 2 minutes until the spinach wilts down.
- Cook the Eggs: Pour the egg mixture into the skillet with the vegetables. Gently scramble the eggs with the veggies, stirring frequently, and cook for 4 to 5 minutes until the eggs are fully set but still moist.
- Cool & Assemble: Remove the skillet from heat and allow the scrambled eggs and vegetables to cool slightly. Lay out the tortillas and evenly distribute the egg mixture across each one. Sprinkle the shredded cheese over the filling.
- Wrap the Burritos: Tightly roll up each tortilla, folding in the sides to securely encase the filling, forming a burrito.
- Freeze for Later: To store, individually wrap each burrito in plastic wrap or aluminum foil and place them in a freezer-safe bag. Freeze for up to 1 month.
- Reheat When Ready – Microwave: Unwrap the burrito and microwave on high for 1 to 2 minutes until heated through.
- Reheat When Ready – Oven: Wrap the burrito in foil and bake in a preheated oven at 350°F (175°C) for 10 to 15 minutes until hot.
- Reheat When Ready – Stovetop: Warm the burrito in a dry skillet over medium-low heat, turning occasionally, until heated evenly throughout.
- Serve & Enjoy: Serve your burrito with salsa and a sprinkle of fresh cilantro for extra flavor and freshness.
