Ingredients
Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
Wet Ingredients:
- 1 1/4 cups milk
- 1 large egg
- 3 tablespoons melted butter (plus more for the pan)
- 1 teaspoon vanilla extract
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk the milk, egg, melted butter, and vanilla extract until well combined.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir just until combined—do not overmix; the batter should be slightly lumpy.
- Cook Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter. Pour 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown and cooked through.
- Serve: Serve warm with your favorite toppings.
Notes
- Do not overmix the batter to ensure fluffy pancakes.
- For extra richness, substitute buttermilk for regular milk.
- These freeze well—just reheat in the toaster or microwave.
