- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar (optional)
- 1/2 cup unsalted butter, cold and cut into cubes
- 3/4 cup buttermilk, cold
- Extra flour for dusting
- 1 tablespoon melted butter (for brushing)
Instructions
- Preheat the oven to 450°F (232°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar (if using).
- Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Pour in the cold buttermilk and stir just until the dough comes together. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick rectangle.
- Fold the dough in half, turn it, and repeat folding 2-3 more times to create flaky layers.
- Pat the dough out again to about 1-inch thickness and cut out biscuits using a round cutter.
- Place biscuits on the prepared baking sheet, close together for soft sides or spaced apart for crisp edges.
- Bake for 12-15 minutes or until golden brown on top.
- Brush the tops with melted butter and serve warm.
Notes
- Use very cold butter and buttermilk for the fluffiest biscuits.
- Do not overwork the dough to avoid tough biscuits.
- You can freeze unbaked biscuits and bake directly from frozen, adding a few extra minutes to the baking time.
