These Fluffernutter Cookies are a delightful twist on the classic sandwich combo of peanut butter and marshmallow fluff. Soft, chewy cookies with a gooey marshmallow center, they are a perfect treat for any peanut butter lover.
Ingredients
Dough:
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar (packed)
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Add-ins:
- 1 cup mini marshmallows
- 1/2 cup marshmallow fluff
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add peanut butter and eggs: Mix in the peanut butter until smooth, then beat in the egg and vanilla until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Add marshmallows: Fold in the mini marshmallows.
- Shape and bake: Scoop tablespoon-sized portions of dough onto the prepared baking sheet, top each with marshmallow fluff, and bake for 10–12 minutes until golden.
- Cool and enjoy: Allow the cookies to cool on the pan for 5 minutes before transferring to a wire rack.
Notes
- For less spread, chill the dough for 30 minutes before baking.
- Use crunchy peanut butter for added texture if desired.
